Deep coffee in Marseille, France

This year’s edition of the Build-Outs of Coffee aims to offer a uniquely global focus, seeking out new cafes that have recently opened or are under construction in every corner of the world. That’s why today we’re delighted to dig deeper into the story of Deep Coffee, a linchpin of Marseille’s specialty coffee community whose new café opened very recently. Let’s take a deeper look, shall we?

For those who don’t know, can you tell us about your company?

We are specialty coffee roasters and cafe based in Marseille, France, we opened five years ago and were more or less the first to introduce specialty coffee to this extent which is the second largest city ​​in France. We started with a small shop with everything inside: the café, our little mini-bodega corner and the roastery in the back.

Can you tell us a bit more about the new space?

We have just finished building a café in a former newsstand in Marseille. The exterior of the architecture remains intact and we have completely transformed the interior into a coffee counter. You can either sit at the counter and enjoy the spectacle of hand brewed coffee right on the street or just take it away. We’ve kept the legacy of the space, selling carefully selected specialist magazines for all things underground culture, music, sports, food, travel and fashion. We are also hosting an art exhibition on the sides of the booth instead of the classic huge advertisements you usually receive, trying to focus the work of creative studios, photographers, illustrators, etc.

What is your approach to coffee?

Since we also manage the roasting aspect of coffee brewing, we pride ourselves on paying close attention to traceability throughout the life of the coffee, ensuring we work fairly with everyone involved. And of course, we do our best to always get the most out of every lot we carefully select.

The hospitality aspect in our cafe is also very important, we want specialty coffee to be accessible and enjoyed equally by novice drinkers and extreme coffee lovers alike. We also make sure to have a relaxed and friendly welcoming attitude. As we like to say about our shop, it’s a local place where downtime is welcome.

Machines, coffees, special equipment lined up?

In the kiosk we use a two-group Victoria Arduino Eagle One with a Mythos One grinder for our espresso. For our filter coffee, a Mahlkönig EK43 grinder and brew with v6o in kits.

How does your project consider sustainability?

Obviously recycling plastic, glass. We also collect all our coffee grounds for a company that makes compost and we encourage our customers as best we can to buy our reusable cups. All of our packaging for our coffee beans is also recyclable as well as all of our takeaway bags and cups.

What is your target opening date/month?

We opened at the end of March 2022.
